Jatimulyo Civet Coffee


Production of Luwak Coffee (civet coffee)

Luwak coffee is actually original coffee beans that eaten by Luwak (an asian palm civet).
These coffee beans experienced a fermentation process, when the beans mixed up with the enzymes in the digestive track inside the civet’s stomach that takes 12 hours to produce an exotic taste and flavor of coffee beans.


Treatment processes that have been developed through several stages are:
1. The Coffee Beans Eaten by Luwak and experience the fermentation in the digestive tract inside Luwak’s stomach for up to 12 hours.
2. Manure drying / under blazing Sun (FULL SUN DRYING) Up to 20% Remaining Moisture Up By 25%.
3. Separation from Ari skin by crushing the coffee beans in traditional way by using Dimples or machine (to be green bean / Rice / Sand Kopi Luwak is ready fried).
4. Sorting the dried beans. The best coffee beans are beans which are still intact and clean.
5. Dried up the coffee beans again under the blazing sun (FULL SUN DRYING) up to 10% remaining moisture up by 13%.
6. Washing Up Net.
7. Moisture drying Radical Back Up 10% Up By 13% Back early.
8. Frying the coffee beans on a traditional frying pan by using manual / traditional firewood or baking it by using oven.
9. Pulverization by using a grinder machine
10. Packaging in the airtight bag.


Coffee that we produced are Arabica java coffee and Robusta coffee.
We're still processing Luwak coffee in traditional way and package it in an airtight bag so it will last within one year in the form of coffee powder.
